Compact microwave-heating applicator design for catering purposes

In the market of institutional food service management equipment such as hospitals, retirement and senior care housing, prisons, etc., ready-meals are prepared and delivered to the inhabitants using a limited choice of traditional equipment, i.e. food trolleys designed to meet the specific requirements for temperature control, transportation, distribution and hygiene in different catering environments. The usage of microwave ovens in this market is not so usual for several reasons: uneven heating due to inhomogeneous food components, inefficient usage of space, need of cold and hot departments for different kind of meals, etc. However, the advantages of using microwave energy systems would be very clear in terms of energy efficiency and speed. In this work, we present a new microwave oven design that is focused in this catering market.
